Roasted Sand Candy™ Sweet Potatoes and Bland Farms® Premium Sweet Onions


  • 3 medium Sand Candy sweet potatoes, peeled and coarsely diced
  • 1 medium Bland Farms Premium Sweet Onion, peeled and cut into 8 wedges
  • 1 teaspoon vegetable or olive oil
  • 1 tablespoon melted butter
  • 1 teaspoon chopped garlic
  • 1 teaspoon finely chopped fresh parsley
  • 1 teaspoon minced fresh thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 tablespoon allspice
  • 1/4 teaspoon paprika


  1. Set the Big Green Egg for direct cooking at 400°F.
  2. In a large mixing bowl, combine sweet potatoes and onion. Add oil, butter, salt, pepper, allspice, paprika, and chopped garlic; mix well to combine. Spread the mixture evenly out onto a large baking pan. Bake 20 to 25 minutes, stirring halfway through baking. Remove pan from oven. Transfer to a mixing bowl and sprinkle with parsley and thyme; toss to combine. Place mixture in a serving bowl; serve hot.
